Have you ever ordered cheese platters for an event and ordered too many? Did you wonder, “What in the world am I going to do with this cheese?” Well, that’s what happened to me. A friend and I split the cheese and I was left with a zip lock gallon bag of assorted cheese: Cheddar, Gouda, Colby, Swiss, Havarti, Muenster, smoked Gruyère and Pepperjack.
What to make? Macaroni and Cheese of course. Except this time it was a total experiment. I posted this picture on Facebook and received several complaints for not posting the recipe. Soooooooooo, by popular request, here it is.
Please note that I don’t know how much of the different chesses were in this casserole and measurements are a good guess at best because I didn’t measure anything. Also, this recipe is for a one quart casserole, not the usual two quart casserole.
Mr. J loved this mac and cheese. It’s creamy and gets a nice little kick from the pepper jack cheese. The next time I make mac and cheese it won’t have this many varieties of cheese but it will definitely include pepper jack.
Just in case you’re wondering, some of the cheese will be used to make cheese muffins.
Ingredients
- 4 ounces dry elbow macaroni (cook according to package dirctions)
- 1-1/2 cups grated cheese (more if desired)
- 1-1/2 cups milk
- 1/2 cup sour cream
- 1 egg
- 2 tablespoons butter (sliced thin, divided)
- Seasoning salt to taste (I use Lawry's)
- Pepper to taste
Directions
- Preheat oven to 350 degrees
- Put a sheet of aluminum foil in bottom of over to catch spill over
- Spray a one quart casserole dish with cooking spray
- Put half of the cooked macaroni in the casserole dish
- Season with the salt and pepper
- Layer with half the cheese
- Dot with half of the butter
- Layer with other half of macaroni
- Season with the salt and pepper
- Layer rest of cheese and dot with butter
- Thoroughly mix milk, egg and sour cream
- Pour mixture over all (if it isn't even with the macaroni, add a little more milk)
- Cook in 350 degree oven for 30 - 40 minutes. Check at 30 minutes to avoid over cooking.
