Today was one of those days that I wanted to make some smothered pork chops for Mr. J but I didn’t want to spend a lot of time on it. So I gave it a little thought and came up with a simple but tasty recipe. No chopping onions or slicing mushrooms, just (gasp!) some dry soup, canned soup, seasoning salt and pepper.
Usually I make mashed potatoes or rice with smothered pork chops but quite frankly, I was feeling a little lazy so today it was canned corn. BUT, we had the fresh turnip greens I cooked yesterday and some good ol’ hot water corn bread. I sliced some ripe juicy tomatoes for the greens and that was some good eating.
Ingredients
- 4 thick cut pork chops
- Seasoning Salt
- Garlic Powder
- Pepper
- 1/2 cup all purpose flour
- 1 package dry onion soup mix
- 1 can Cream of Mushroom with Roasted Garlic Soup
- 1-1/4 cup water
- 1/4 cup vegetable oil
Directions
- Season both sides of pork chops with seasoning salt, garlic powder and pepper
- Dredge pork chops in flour
- Heat oil in large skillet (medium high heat)
- Brown pork chops about 3 minutes per side
- Combine dry soup mix, canned soup and water
- Pour off most of the oil from skillet
- Pour soup mixture over pork chops
- Cover and simmer on medium low heat for about 30 minutes
